(This is Diane's traditional holiday dish to serve with beef roast.)
Set out the milk and eggs to bring to room temperature. Heat 12 muffin pan for 10 min, with the beef roast. When the roast is removed, turn the oven up to 450.
Spoon fat into each muffin cup. Pour batter in each to 2/3 full. Bake 10 minutes at 450 (will be puffed and brown). Turn oven down to 325. Bake 10 more minutes. (Better not to open oven.)
Options: Chill batter, bake at 425 for 20 min.
