Crustless Quiche
Ingredients:
- 1/3 cup butter or olive oil
- 1/4 lb sliced mushrooms
- 1 small zuccini, sliced
- 1 cup diced cooked ham
- 4 eggs
- 1 lb ricotta or yoghurt
- 1 cup shredded pepperjack, monterey, or other cheese
- 2 to 3 cups chopped greens (I think raw but it doesn't say)
- 1/2 teaspoon dried dill
- 1/4 teaspoon black pepper
Directions:
Saute the mushrooms and zuccini until soft. Stir in the ham and cook together.
Beat the eggs, then add everything. Pour into a 10" pie pan. Bake at 325 deg F for 35-40 min.
Cool for 10 min.
