Orange Rosemary Shortbread




Let the butter sit out to reach room temperature. Preheat the oven to 325*F, non convection setting.

Mix the butter, sugar, and salt until the butter turns creamy and pale. Add in the orange extract and rosemary and blend.

Add the flour and mix on low speed. The dough will clump up but not come together. Finish it with your hands, mashing it into a rough ball and pressing it into an 8" pie pan or baking dish. (No need to grease the pan.)

Bake for 30 minutes, until lightly browned. (With whole wheat it can be hard to tell when something is browned, but fortunately there's nothing that can come out really under-done.)

Cut into pieces while still warm.
