- 1 cup Greek yogurt
- 1 tablespoon lemon juice (to taste)
- 1 garlic clove, minced
- 1/3 English cucumber
- 1 tablespoon fresh dill or mint, chopped
- salt for salting the cucumber
- salt and pepper to taste
Grate the cucumbers. Salt them, let them drain, then rinse and pat dry.
Mix all ingredients. Flavor will develop in the fridge. If you prefer a
smooth texture, you can blend this in a food processor.
Greek yogurt is used because of its thick texture. It keeps the sauce from being too runny.
