This recipe is a great way to use up leftover rice or beans. Amounts are approximate.
Mix the rice with about 2/3 of the salsa and press it into a baking dish. Mix the chickpeas with the rest of the salsa and layer them on top. Slice the tomato and layer it over the chickpeas. Top with shredded cheese. Cover with aluminum foil and bake for 1 hour at 350*F.
