Process the cauliflower in a food processor until it's about the size of rice.
Beat eggs, then mix all ingredients with cauliflower. The batter should be moderately stiff.
Heat oil to medium. Drop in spoonfuls and then flatten. Fry until golden, about 5 minutes. Lay the croquettes on paper towels to absorb some of the oil.
These are tasty served with a creamy salad dressing.
