Cooking rice in orange juice results in a sweet-and-sour flavor, offset by the bright cilantro.
Use a saucepan or skillet which will hold 1 cup of cooked rice. Melt the butter and fry the onion until soft. Add the rice and spices. Cook, stirring constantly, until the rice is coated with spices and the spices start to darken a little.
Add the orange juice and broth. Bring to a boil, then reduce heat and simmer until the rice is cooked, about 20 minutes.
Gently stir in the cilantro and serve.
